Spring Honey
Spring honey, the first crop of the season. A very sweet, light and runny honey. Perfect on toast, or for a light salad dressing. But turn your back on it, and the honey will set solid in the jar. A good honey for 1st timers to try.
Summer Honey
Summer honey is the 'Merlot/Shiraz' to the Spring's 'Beaujolais'. It's richer, darker, more floral than Spring honey. Towards the end of the season, and depending on the weather, the bees forage Autumn Ivy flowers. This makes for an even darker honey, with an almost perfumed taste, akin to Turkish Delight or Lavender Chocolate.
